Make sure you’re refuelling yourself with the healthiest possible meal after your long run with Anita Bean, sports nutritionist and author of The Runner’s Cookbook (links below).

Tofu Pad Thai is one of Anita’s absolute favourites, and with her special trick to crisping up the tofu, it will soon be one of yours too! It’s so simple and easy to make, and if you don’t have time to chop up all the veg, just buy one of those packets of pre-cut veggies from the supermarket to make this even faster!

It’s always a pleasure to work with people who are so knowledgeable about their specialism, and Anita Bean is one of those experts in #runningnutrition. She also explains in detail the micro-nutrients and properties of each of the ingredients and what benefit they have to runners either in terms of providing energy or promoting recovery.

Subscribe and stay tuned to #WildGingerRunning YouTube channel for Anita’s favourite pudding for runners, coming soon.

Having made several tasty meals from Anita’s collection of over 100 healthy recipes for runners, I really recommend this book. It also contains super useful info on fuelling for different distances of race including ultras, how to lose weight safely, the truth about supplements and sports nutrition products, and addresses common running nutrition myths. It’s an essential tool in your arsenal of running performance aids.
