Make sure you’re refuelling yourself with the healthiest possible meal after your long run with Anita Bean, sports nutritionist and author of The Runner’s Cookbook (links below).

Tofu Pad Thai is one of Anita’s absolute favourites, and with her special trick to crisping up the tofu, it will soon be one of yours too! It’s so simple and easy to make, and if you don’t have time to chop up all the veg, just buy one of those packets of pre-cut veggies from the supermarket to make this even faster!

She also explains in detail the micro-nutrients and properties of each of the ingredients and what benefit they have to runners either in terms of providing energy or promoting recovery.
